Guest guest Posted November 28, 2000 Report Share Posted November 28, 2000 Well I had a good day yesterday food wise but feel kind of lousy health wise and went to bed early. Food 1 Atkins Shake 2 coffee's with Splenda 3 pieces of cheese - and I was going to have 3 pepperettes but half way through the second one at school I found them with mold on them - YUCK Cheese Sandwich with lc bread Shrimp (new recipe follows) and salad with Ranch and Bacon dressing Diet pepsi and lots of water The guys in the family were having pizza last night and I just know I have to stay away from that stuff - so was going through the freezer and decided on a shrimp ring that I had in there. It was 9 ounces of shrimp. So then I tried to decide what I wanted to do with it because I usually like shrimp in the red shrimp dipping sauce but its not low carb. So here's what I came up with and it was pretty good - at least I would make it again :-) I thawed the shrimp and took off the little tail things. Mixed up melted butter, a couple of sprinkles of chili powder and crushed garlic cloves then stirred in the shrimp and let it sit for a little bit. Microwaved the shrimp and butter to warm it up. Grated about 1-2 ounces of Mozzarella cheese and mixed in - ohhhhhhh about 6 puffy crushed pork rinds (not flavored) and a sprinkle of chili powder. Put the warmed shrimp in a pan (that can go in the oven) in a single layer and then sprinkled on the cheese mixture. Then I broiled it till the cheese was melted and slightly toasted. Hummmmmmmmm not bad at all. The pork rinds gave it a little crunch and the garlic and chili went well with the shrimp. The whole recipe was only about 2 carbs.
