Press the garlic out of the heads into the blender. Be sure to discard the skins. Add all the other ingredients into the blender and puree. Serve hot with a parsley garnish. Makes 8 cups of soup. -------------------------- Note: I used 1 head of fennel (because that's all I had) and it was fine. It is about what I use per batch of soup I make here, and if you ever make chicken veggies soup, you know it needs massive quantities as well as leek....lol. This sounds utterly delicious and I will probably make this at the end of the week when I grocery shop at the organic grocer that is about 45 minutes drive from me.
