Roasted Garlic and Fennel Soup

1 Tablespoons vegetable seasoning

2 large carrots

2 Tablespoons extra virgin olive oil or flax seed oil

6 heads of garlic (yes, that's right - heads, not cloves!!)

2 stalks of celery, coarsely chopped

2 heads of fennel, coarsely chopped (I only had one and it turned out fine)

1 large onion, pealed and coarsely chopped

1 cup fresh apple juice

4 cups vegetable stock

2 Tablespoons Italian parsley, chopped

Preheat oven to 400 degrees

Place all the vegetables, apple juice and garlic in a large baking pan, cover

with foil and roast in the oven until the garlic heads are soft and the

garlic can be easily pressed out.

Press the garlic out of the heads into the blender. Be sure to discard the

skins. Add all the other ingredients into the blender and puree. Serve hot

with a parsley garnish.

Makes 8 cups of soup.

Note: I used 1 head of fennel (because that's all I had) and it was fine.

The soup definitely has a strong garlic flavor, but I think it's really good!

Thank you so much for taking the time to post the recipe. The garlic is not a

problem. It is about what I use per batch of soup I make here, and if you ever

make chicken veggies soup, you know it needs massive quantities as well as

leek....lol.

This sounds utterly delicious and I will probably make this at the end of the

week when I grocery shop at the organic grocer that is about 45 minutes drive

from me.
