I just heat up my frypan (I guess to medium high) and pour in the parmesan

cheese into kinda a circle. I use the back of a spoon to pat it smooth and even.

Then when it is all bubbly on top and brown underneath I flip it over. And it

does stay together!! Theory is if you set the cooked ones around to bend them

as they cool you end up with tortillas that you can fill! I just eat them like

chips.
