Iron pans have to be greased all the time and require special maintanence at the beginning. Actually, some people do not need iron (like my son had iron too high and still is on the high side of average). I use glass to bake and enameled pans (for omelet or veges). I have noticed recently that you can pick up some healty pots and pans at antic shops (they are not as expensive as other items). I still use some non-stick for baking and frying ocasionally.
