Guest guest Posted July 14, 2004 Report Share Posted July 14, 2004 It's really not a "recipe", just something I put together. I browned 1 lb. of ground chicken and fixed 2 cups of instant brown rice. Then, I chopped up 2 fresh zucchinis and mixed them in a large bowl with the rice, chicken, no-salt added tomato sauce and no-salt added stewed tomatoes and a goodly sprinkle of cheese-flavored french fried onions (the ones in a large can). Put it all in a 13x9" pan, sprinkle some light cheddar cheese on top, cover with foil and bake it for 30 minutes. I've also used ground turkey in this way. You could probably also use very lean hamburger. It makes a lot, so I will have left-overs for tomorrow.
