DeEtte: I noticed in your post that has become a salad nut. Brittany

is really into the salad too- having never wanted to touch a lettuce leaf

before ketolife! This may sound like a dumb question but do you make any

other dressing besides using the mayo? I just printed out Faye's caeser

salad but am always looking for more ideas. Any grand inspirations? Thanks

a bunch!

DeEtte: Thanks for the ideas! I am heading to Wild Oats today as I am out

of stevia so I will try to find the ranch dressing! I do have the keto

cookbook - I haven't looked at it in so long -will have to have another

browse through it!! It's amazing to me how much these kid's tastes change

while they are on the diet! Brittany's favorite meal right now is pizza with

eggplant as the crust- I would never have believed it a few months ago!

Good luck with the final wean- hopefully will be med free soon!! ( I

must tell you I love looking at Brittany and knowing it's " all her " -

sometimes I used to wonder if my little girl was in there anymore!)

Faye: Thanks for the dressing! I have to tell you- I put away my keto

cookbook because I found it not much help! But , your recipes I always save-

even if I can't use them now - I know I will want to come back to them! I

have been using your PB cookie one (adapted with macadamia nut butter) and am

now going to try the other cookies this weekend !! You are a great resource

for this site! I am going to try the dressing with DeEtte's idea for

strawberry chicken salad! THanks again!

Hi. I've already posted about Stevia. I have a really sensitive little

one. . . but I've never noticed anything with the liquid Stevia. They're

all different though. My personal opinion would be that it's certainly much

better than NutraSweet or other artificial sweeteners. Somewhere I have an

article that actually discusses the health benefits of Stevia.

As for freebies -- we use macademia nuts (2/day) and lettuce leaves. She's

allowed 2 free lettuce leaves per day. . .but we sometimes give her more (if

I use Romaine hearts, the leaves are smaller than the full Romaine leaves)

because she's turned into a salad nut. . .wouldn't touch it before.--DeEtte

Reference recommendations/stevia/long

Hi,

My son Zac, 3years, is seizure/med free since 1/15/01.

My concern is that he only wants to drink diet soda. We have started to

transition to the liquid stevia using it with Wylers, club soda, and

Bickford

flavors. We use the pure liquid form. The other night, he had difficulty

sleeping, and I wondered if there was a link to the stevia. Zac's seizures

have been linked to sleep in the past. I have been following the stevia

conversation for help. In addition, he still prefers Mug's diet root beer.

Any suggestions?

Also, we are trying to find resources that chart nutrional facts and

recommend which foods contain the minerals & vitamins that are recommended

for this diet. I notice that many use magnesium, which our neurologist and

dietician couldn't tell me anything about.

I have found in " Fresh Produce Guide " by Dr. Henry Richter, M.D. that

English/Burpless cucumbers have zero protein, fats, and carbs. Our

dietician

said that we could therefore use it as a free food in moderation (1 to

3slices). We therefore added it to his daily 3 olives. Anyone else doing

that? Any other free-bees that I could alternate for variety?

-- Before her ketolife, wasn't a salad nut. . .but she was a

ranch dressing nut! I would buy at Wild Oats, either their name brand or

Annie's Cowboy Ranch. I had actually worked it into a few meal plans. I've

since cut it out, only because I'm trying to reserve all carbs for fruits

and vegetables -- but, even at 4.0, I was able to use a fair amount. Don't

know if you have Wild Oats or something similiar where you're at. . .

Annie's is a fairly common brand in natural grocery stores, too.

likes to eat her salad plain. . .and uses her " dressing " for dipping. .

..it's pretty funny because she dunks her lettuce in the " dressing, " which

right now, is just mayo.

Also, do you have the Ketogenic Cook Book? I ordered it from Amazon.com.

It's written by two chefs who had two children on the ketogenic diet and

were determined to make it interesting and palatable. They have some

recipes for ranch, italian and bleu cheese dressing, as well as ways to

dress up mayo. If you don't have the book, I'm happy to post some of their

recommended ingredients. I haven't tried any yet. . .trying to keep things

simple until we get off Lamictal -- should be another three weeks and we'll

be med free (knock on wood!).--DeEtte

Hi

Try 5 gm balsamic vinegar. 10 gm olive oil and .5 gm crushed garlic for a nice

tangy salad

dressing.

, I wonder. Do you mean the long, seedless cucumbers? I have been

using them for Jake, but I calculate it into his meal as a veggie, a regular

cucumber.

Anyone else have an opinion?

Barb,

Yes; those are the cucumbers. There are a few different ones so I would

check with your grocer to make sure that they are English, burpless

cucumbers. We use them in addition to his other freebes which actually have

carbs, pro, & /or fats and have had no problems.

What cucumbers are burpless? The ones we have

here (in the UK) are called English I presume. They

are long dark green with slight seeds, eaten unpeeled

and with the seeds. They are low in Prot, fat s & Carbs.

The values I use are 0.7%, 0.1% & 1.5% respectively.

Hate to be contrary, but I have a hard time believing this one. Can't

see how there could be no carbs. I'd check with the USDA website. If

it's not there, I'd avoid the food (or at least calculate it in as a

regular cucumber). Just my thoughts!
