Guest guest Posted February 28, 2004 Report Share Posted February 28, 2004 Zucchini Casserole made in the Crockpot 1 bunch green onions -- sliced 1 green pepper -- cut in thin strips 4 zucchini -- sliced & unpeeled 3 small diced tomatoes 1 teaspoon salt 1/2 teaspoon pepper 1/2 teaspoon basil 1 tablespoon olive oil 1 ounce grated lowfat Parmesan cheese Combine all ingredients, except olive oil and cheese, in a slow cooker. Set temperature on low and heat for 3 hours. Dot casserole with olive oil and sprinkle with cheese. Cook 1 1/2 hours more on low setting. Makes 6 servings.
