The adrenals are two small grands that sit on top of the kidneys and yes you can eat them. They may have a capsule around them like testicles. This is best remove by blanching then a cold water bath to facilitate peeling. From there just bread and fry. Quick cooking will be best. Mom use to like rocky mountain oysters and I liked pancreatis. The best thing would e to find a real butcher and ask him. Chances are he has eaten them.
