Food Safety Speaker needed

Anyone know of a great food safety speaker?  

Looking for such a speaker for a world-class one-day seminar in the Mid-West

that has been attended by mostly microbiologists in the past.  Who would

represent RD's well.  Budget not unlimited.  Any ideas?
