LOL I still think Mike's apple pie has got to be the absolute best. I have heard her say that she likes to cook and said Mike makes her crust with Crisco!! Oh My Gosh, my mouth is watering while I write this!!!! And I am not sure when Normi flies home, but I am sure we will see people bailing from the plane because she has been eating dried apricots and she gets the big D word very easily!!!!! And I'm feeling much better than I did last sunday, just took a while. I suppose it does help to have a weekend where you don't have a timetable to have to work around. I have been trying to read the posts here this week even though I have need written anything myself. I would like to send some healing thoughts to those of you who are not doing well and I'm glad to read about those that are doing better. And I think I understand the strange desires for food I've had this past week. Between conversations of krisy kreme donuts and home made pizza, I sign on tonight and read about riots over apple pie. And i ask myself, why do I have a desire to snack? Although the comment about farting on the plane does make one pause for a moment. What a great mix of conversations though. Have your doctor do an A1C test on your blood. The A1C test is a better indicator of diabetes and glucose control over the past three or four months. I am sure your doctor will prescribe such a blood test for you, since your glucose level was so high. The single measure of the A1C is what you need to know now. When you know the test results, post it here, and let us talk about what it means at that time. Don't throw too much too fast at me because I don't take it in all that fast. But I need to know what to get for my sugar check ups and how much it would cost. I don't have insurance at all so will have to pay for everything myself. Secondly what do you eat for breakfast, and when you go to a wrestraunt how do you keep with the diet. Where can I get a carb book in Braille or something I can look at for the note taker? Also I see my doctor in April but feel it should be sooner if they want me to do differently. Have someone read to you how many grams of carbs there are in a sloice of bread. Sara Lee Delightful breads are low in carbs. Creal is not good as there are many carbs in cereal.I will send you an attachment that has a list of the amount of carbs in most foods. Cereals, rolled oats, muesli abou 1/2 cup with low fat milk. Not only will you need to watch what you eat but you may also need to do some form of exercises. See a dietitian and they can give you some guidance. Now, I have pasted some information below to give you some ideas for foods. Maybe not all on this list will agree saying they are too high in carbs but you can only try it out and see how your blood sugars react. I don't know all your circumstances but hope this can help. This information was taken from a book called, the New Glucose Revolution - People with diabetes. Some products might not be available in the USA as the book was printed in Australia. from down under How much fat do you eat a day? Less than 40 grams Excellent. 30 to 40 grams fat per day is recommended for those people trying to lose weight. 41 to 60 grams Good. A fat intake in this range is recommended for most adult men and women. 61 to 80 grams Acceptable. If you are very active, IE doing hard physical work (labouring athletic training. it is probably too much if you are trying to lose weight. More than 80 grams You are probably eating too much fat, unless of course you are superman or superwoman. Breakfast Basics 1. Start with some fruit or juice. Fruit contributes fibre, and more importantly Vitamin C and antioxidants. 2. Try some breakfast cereal. Cereals are important as a source of fibre, Vitamin B and iron. When choosing processed breakfast cereals, look for those with a high fibre content. 3. Add milk or yoghurt. Low fat milk and yoghurts can make a valuable contribution to your daily calcium intake, by including them at breakfast. All of them have a low GI value. Lower fat varieties have just as much, or more, calcium as full cream milk. 4 add some bread or toast if you like. The lowest GI bread are: Burgen - rye (Tip Top) - 51 Burgen - oat, bran and honey loaf with barley (Tip Top) - 41 Multi-grain - five grain (Tip Top) - 43 Performax country life - 34 Ploughman's - wholegrain original recipe (Quality bakers) - 47 Your quick low fat and low GI Breakfast ideas 1. Spread raisin toast with low fat cream cheese and top with slice apple. 2. Top a slice of Burgen - oat bran and honey loaf with slice banana. 3. Sprinkle porridge with raisins and brown sugar. 4. Enjoy a low fat milk shake. 5. Spoon slice peaches and raspberries through a tub of low fat yoghurt. 6. Top a bowl of All-Bran and low fat milk with canned pears slices. 7. Smear avocado on Performax bread and top with baked beans. 8. Team a bowl of Guardian and low fat milk with a glass of fresh orange juice. 9. Top a heavy grain fruit bread with fresh ricotta. 10. Enjoy a steamy hot chocolate with low fat milk and whole grain toast with Vegimite. Light lunch ideas 1. Based your light meals on carbohydrates. 2. You might add a little meat, cheese egg, or fish. Remember - the quantity of carbohydrates should be high, the add-ons should be accents. Here are some ideas Bacon, just a sprinkle of lean chopped Cheddar cheese, a couple of small cubes Chicken, about 1 cup chopped, cooked Egg, hard boiled, cut into quarters Ham, a thin slice Roast beef, a lean slice Sardines a couple with lemons. Smoked salmon, a slice Tuna, a small tin in brine or water Turkey, a thin slice 3. Fill it out with vegetables. Here are some suggestions Carrots, grated Celery sticks Cherry tomatoes Cucumber Salad greens Snow peas Sprouts Sun-dried tomatoes 4. And round it off with fruit. Low GI lunches on the go 1. Fill some flat bread with hummus and tabbouli. 2. Top a bowl of pasta with pesto or chopped fresh herbs and ricotta. 3. Put your favourite sandwich filling on Burgen bread, toasted if you like. 4. Melt cheese over tomato on slices of grain bread. 5. Top a tub of fruit salad with a pot of low fat yoghurt. 6. Take a green salad plus some bean salad, add grainy bread. 7. A bowl of steamy home made minestrone soup and a piece of fruit. 8. A lentil or vegie burger with chilli sauce and salad on crusty roll. 9. Fill a jacket potato with baked beans and top with a sprinkle of cheese. 10. Beat up a banana smoothie and couple it with a high fibre apple muffin. Low GI Main Meals 1. First choose the carbohydrates. Which will it be? Sweet potato, rice (Basmati or Doongara), pasta (any type), grains (like cracked wheat or barley), chickpeas, lentils and beans or a combination! Could you add some bred of corn? 2. Add vegetables and lots of them! Fresh, frozen or canned - the more the merrier. 3 Now just a little protein for flavour and texture. Remember - you don't need much! Some slivers of beef to stir fry, a sprinkle of tasty cheese, strips of ham, a dollop of ricotta, a tender chicken breast, slices of salmon, a couple of eggs, a handful of nuts, or use the protein found in your grains and legumes. 4 Think twice about using any fat. Check that you are using a healthy type (mono- or polyunsaturated. Low GI dinner Ideas 1. Team spaghetti bolognese with a green salad. 2. Wrap a fish fillet dressed with herbs and lemon, or tomato and onion, in foil and bake. Serve with a heavy grain bread roll, with mixed vegetables or salad. 3. Stir fry chicken, meat or fish with mixed green vegetables. Serve Basmati rice or Chinese noodles. 4. Grill a steak and serve with a trio of low vegetables - new potato, sweet corn, and peas. 5. Make a quick and easy spicy dish along with lentils and serve with rice and chutney. 6. Cook spinach and ricotta tortellini, team up with fresh garden vegetables and top with tomato pasta sauce. 7. Create a one pot chicken casserole with favourite vegetables and chunks of new potatoes. 8. Make a lasagna - vegetables and beans or beef and serve it with salad. 9. Buy a barbecued chicken, steam sweet corn cobs and toss a salad together. 10. Serve chilli beans and beef with a soft tortilla bread. For those pressed for time - buy one takeaway meal, split it with your partner and pad it out with home-cook low GI rice or pasta plus loads of vegetables. Desserts - A low GI finish Although Often overlooked, desserts can make a valuable contribution to your daily calcium and Vitamins C intake when they are based on low fat dairy foods and fruit. Recipes incorporating fruit for sweetness will have more fibre and a lower gI than recipes with sugar. What's more, desserts are usually carbohydrate rich which means they help top-up our satiety centre, signifying the completion of eating and reducing the tendency for late night nibbles. If you haven't time to prepare a dessert, simply serve a bowl of fruits in season or a fruit platter with ricotta cheese. Remember temperate climate fruits such as apples, pears and stone fruits tend to have the lowest GI values. Quick and easy low GI desserts. 1. Low fat ice cream and strawberries. 2. Baked whole apples, stuffed with dried fruit. 3. Fruit salad with low fat yoghurt. 4. Make a fruit crumble - top cook fruit with a crumbled mixture of toasted muesli, wheat flakes, a little melted margarine (poly or monounsaturated) and honey. 5. Slice a firm banana into some low fat custard. 6. Top canned fruit (peaches or pears) with low fat ice cream or low fat custard. 7. Wrap pie - packed apples, sultanas, currents and spice in a sheet of filo pastry (brushed with milk (not fat) and bake as a strudel. 8. Make a winter fruit salad with segments of citrus fruits plus raisins soaked in orange juice, honey and brandy. 9. Team a can of blood plums with a dollop of natural yoghurt and a sprinkle of toasted muesli. 10. Enjoy a jelly whipped made with low fat milk or yoghurt and set with fruit. In Between meal -snacks Many people with diabetes need between meal snacks. The GI is especially important when carbohydrate is eaten by itself and not as part of a mixed meal. This is because carbohydrates tends to have a stronger effect on our blood glucose level when it is eaten alone. When choosing a between meal snack, look for something low in fat and low GI. For example, an apple with a GI of 34 is better than a slice of white bread with a GI of around 70, and will result in less of a jump in the blood glucose level. Some snack foods with a very low GI (such as peanuts, 14, have a very high fat content and are not recommended for people with a weight problem. As an occasional snack they are fine, especially as their fat is monounsaturated, but not every day. Remember that peanuts are very More-ish and it is often hard to stop at just a handful! New evidence suggests that the people who graze, eating small amounts of meals throughout the day at frequent intervals, may actually be doing themselves favour. A recent study showed that snacking stimulates the body to use up more energy for metabolism compared to concentrating on the same amount of food into three meals.
