If she can, adding that to the soy cheese can add to the flavor. For the ricotta I used 1# firm tofu and 8 oz vegan mozzarella and pulsed them with an immersion blender until it looked like ricotta. Very successful. Instead of Parmesan I sprinkled Nutritional Yeast on the layers and topped the ziti with shredded vegan mozzarella and nutritional yeast.
