I skip the ricotta in my lasagnas for that very reason. No one ever

complains (and I have made some for pot lucks, etc.)

I have used crumbled tofu (use a potato masher with a block of tofu) instead of

ricotta for years and it gives a similar texture which is nice. Soy cheese is

a reasonable alternative but it doesn't brown well so cooking time may need to

be monitored differently.

How about making it the regular way and taking enough lactase enzyme to

counteract any of the lactose in her serving???

This is not related to ricotta, but can she tolerate parmesan cheese? If she

can, adding that to the soy cheese can add to the flavor.

This is not related to ricotta, but can she tolerate parmesan cheese? If she

can, adding that to the soy cheese can add to the flavor.

I just made VEGAN Baked Ziti. For the ricotta I used 1# firm tofu and 8 oz vegan

mozzarella and pulsed them with an immersion blender until it looked like

ricotta. Very successful. Instead of Parmesan I sprinkled Nutritional Yeast on

the layers and topped the ziti with shredded vegan mozzarella and nutritional

yeast.
