I'd bet the meat doesn't absorb any, or minimal amounts of fat and it probably just contributes to flavor. Sure a lot better than deep fried potatoes or fried okra (my hubby's favorite) fried in artificial processed grease (refined oil that rapidly turns rancid) that actually soaks up the gease! ;-) A bit costly however! I have not eaten one like that bc I don't often go to steak houses, but I read ads, reviews etc. And it makes sense. Fat has taste lean does not, and butter developes a mouthfeel and aroma that cannot be substituted easily by anything else (except for me since I'm not a butter eater as much as a smeller - jeez, how odd I sound right now but it's true - I would not hesitate to substitute butter w creme fraiche which I can't resist. They're almost the same, really, but creme fraiche would not go well over steak) I am not surprised, however, I've been seeing this type of steak served for at least 30 years, and many of the obese now weren't even born then. I'm not saying it's right or nutritionally sound, I'm just saying, that's what's out there, folks. We really need to strategically figure out how we can influence those that are ingnorant and live for the moment to believe us when we say there are other better ways to eat and live longer a healthier life, and that's it's fun and delightful too. We often would discuss the ingredients in the foods on her menu. There was NO WAY she was going to cut the fat or sugar down in her recipes, because that's what made her establishment so popular! I learned a lot about the mind-set of chefs from her. We often would be focusing on two separate things when discussing food... In fact, it took me MANY years to educate her on the value of cutting out the fat in HER diet if she wanted to lose weight. She finally saw the value of changing her diet, but sold her restaurant before she was ready to make changes to the recipes. Today her weight is much improved and she not only feels better but is enjoying a healthy retirement.
