Guest guest Posted December 29, 2000 Report Share Posted December 29, 2000 I mash avocados, add very finely chopped onion to taste, alot of finely crushed garlic, some lemon juice (mandatory or it will darken), and sometimes I add some finely diced tomato ( drained), and I either add some finely diced peppers (hot or sweet depending on your tastes - I like hot). I have at times used a small can of diced green chilies - excellent. If there's anything else I put in there, I sure can't think of it! I sometimes like lime juice instead of lemon juice in it. Those great big avocados are alittle different than the little wrinkly ones. One is from California, and one is from Florida or something like that. Guest guest Posted December 29, 2000 Report Share Posted December 29, 2000 Atkins has one in DANDR (page 371): Guacamole 1 ripe avocado cubed 2 medium tomatoes cubed 1 medium onion cubed 2-3 tablespoons chopped cilantro 1 teaspoon sea salt 1 teaspoon fresh lemon Chop all ingredients together, Chill and serve. Makes 4 servings. Total carbs 34.8. Grams per serving 8.7. When I make guacamole I just mash the avocado up and put in a little onion and tomatoe if I have it. I often mix in a little sour cream and/or mayo to make it goopier (if using as a dip) and I love to add hot pepper flakes for zip. Avocadoes aren't a really low carb veggie (like brocolli or cauliflower), but you can certainly work them in occasionally depending on your daily carb limit. They are very satisfying because they have a high fat content. It's important to remember that you will see lots of different foods posted that people are eating and they may or may not fit well into your own eating plan. Some folks are on induction with less than 20 carbs a day and others are OWL (on-going weight loss) at 30, 40, 50+ carbs per day.
