Guest guest
I'd like to use up my Bob's Red Mill All Purpose Gluten Free (BRM AP GF) flour in my fridge. I bought it this past May to send my mother some GF biscotti (and I should probably check the expiration date...). The problem is that I am having trouble finding other recipes I could use because most require an additional ingredient that is not usually in my pantry. I have looked on Bob's Red Mill website before and will look again, but if any of you have had satisfactory results with any recipes just using this flour, I'd very much appreciate it. I will consider purchasing Xanthum Gum, if absolutely necessary, but I have also heard that gelatin can be used in some cases (please share your thoughts on that too), and I already have some in my pantry (I am making another mental note to check expiration dates on the gelatin too) . I also intend to post it on my blog, as many people who are not gluten-sensitive could find something practical to make for their friends who are -- without having to buy several different flours. By the way, these are the recipes I substituted with BRM AP GF flour with success: Biscotti with Lavender and Orange <http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe\ & recipe_id=222262> (came out great): Coconut Biscotti <http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe\ & recipe_id=1041878> (tasted good, but broke easily. Probably needed xantham gum?) Thanks, Renata Mangrum, MPH, RD http://nurturingnotes.blogspot.com <http://nurturingnotes.blogspot.com> P.S. I think some of you will get a kick out of what my 6 year old had to say about the RD credential <http://nurturingnotes.blogspot.com/2008/12/mph-rd.html> :-)
