Guest guest Posted March 23, 2011 Report Share Posted March 23, 2011 Hi All, Personal question here. YAH, SPRING ALMOST HERE! After 6 inches of snow yesterday, it was nice and sunny today. I spent a bit of time digging out my small greenhouse (still plenty of snow on the ground) and I still had " dead " flat leaf and curly leaf parsley in their from last summer. Well, as I was cleaning up the bed, and turning the dirt, I found some nice " finger size " parsley roots. I've NEVER used parsley roots, but recall hearing about it. I did a google search of " parsley root " and it sounds like the usual ones usually aren't from regular " curly and flat leaf " parsley. But, I'm thinking they should STILL be just fine. (They didn't appear to have frozen, since they were deep in the dirt and in the greenhouse.) So, can I just clean and use them as you would other edible roots (like turnip, parsnip, etc)?
