I usually take the bunch about 6-8 leaves, cut off the green part that will be about a scant cup cooked. I take the stalks because they take longer to cook and cook them with onions for an omelet or stir fry. If I make a quiche I saute my onions and stalks steam the leafy part then use both as my vegetable filler. Kale is the same way the leafy part cooks faster then the stems. I'll figure out the information I am looking for by cooking the leaves based on the recipe I am using. This question can be disregarded now. At least the way I make it, Southern style, it cooks down by over half.
