Guest guest Posted June 1, 2011 Report Share Posted June 1, 2011 Greetings: This question pertains to a Title 22 interpretive guideline for the ounces of protein required per day on the menus. I have always written the menus to provide 6 oz of protein per day, usually 1, 3, 2 or in whatever combo needed to provide enough viable protein source. I have never included milk or any other dairy product included to provide another major nutrient. I have also never included ingredients, that is, egg, skim milk powder used as a coating or ingredient in a recipe. And I have never included the proteins in grains or vegetables since they do not provide all the indispensable AA. I do include legumes and non-animal sources of protein as long as there is a complementary food that will complete the protein profile. It's basic nutrition 101 as we all know. Right now I cannot find the source for the California Title 22 requirement, as my very old Title 22 that includes the interpretive guidelines is somewhere in my garage and I wasn't smart enough to label the boxes or keep a detailed inventory. Needless to say I'm pressed for time, or I wouldn't still be up looking for the information. If any California RD has this reference in any form, I'll appreciate the information. TIA!!
