Start with the basics at the NIH website to explain it.

Agree that has the best reference book (I tell my patients this will be

their bible, they MUST get it).

Celiac Disease Foundation is a great support (look for a local chapter).

For kids I will also recommend Dana Korn's book " Kids with Celiac Disease "

 

Why do you need meal plans?  Eat real food. Skip all the processed stuff. Use

potatoes, rice, quinoa, corn for starch (I like corn pasta over rice noodles). 

Check out Whole Foods, Trader Joes and even regular markets for gluten-free

versions of cereals & pastas.  Get a bread maker and look at Bette Hagman's or

Carole Fenster's cookbooks for best bread recipies (pre-made stuff found via the

GlutenfreeMall aren't very good).  And Amy's Gourmet has a few good frozen

gluten-free kid friendly entrees (like Mac & Cheese, and Pizza).  Oh,

Kinnikinnick Foods has the best cookies.

R.O.C.K (raising our Celiac Kids) is a great resource! Google for a chapter

near you, and Danna Korn's books are fantastic for kids. Same with

Chalmer's " Mommy, What is Celiac Disease? " http://www.katiechalmers.com/

I will have " how to " celiac videos out later this week on label reading,

overview and such--I can send you a private link to the not-totally polished

version if you email me privately.
