Teaching Intro Nutrition at Comm. College

I am in negotiation with a local community college that is wanting to begin

offering an introductory nutrition course one night per week. I have taught

individual lectures before, but never an entire course, and would love to hear

advice/insight from those of you who have.

If anyone can email me with ideas for developing a syllabus, lecture plans, as

well as compensation (the amount they first offered seemed incredibly low for an

entire semester of work!), I would greatly appreciate it.

I have taught at two colleges a an adjunct instructor, absolutely loved it but

sooooo much time you have to put into that you are not compensated for, my

suggestion is to seek out some introductory nutrition books which come with a

syllabus, find a well written book that comes with software for students to

analyze their intake for a few days, I divided the class into small groups and

had each group plan and cook a nutritious meal for the class as a part of their

grade, it was awesomely popular as a science elective course, Lots of work for

me though but very rewarding, Sue
