How can they say fruits and vegetables are alkaline when they are quite acidic? One article the page links to says water is neutral pH but f & v are alkaline. I can't think of any of the top of my head that are truly alkaline and not just not acidic (<4.6) enough to use the boiling water bath canning method. About all I learned about acid/base balance was a mention of it in the flash cards for the RD exam. I double checked the Nutrition & Diet therapy reference dictionary just now and figure whomever is pushing the diet doesn't know how to explain it. Anybody have patients on it?
