That is why like calories in calories out, the amount of saturated fat content of a food does not indicate how much of it is atherogenic. Grass fed animal fat is lower in atherogenic saturated fats then grain fed animals. The same thing with saturated vegetable fats, it is more important what saturated fats are present then total saturated fats.
