I then simmer down the leftover soup till it becomes a thicker sauce and serve it over cheese ravioli. I have used curry, traditional pumpkin pie spices, sage(not liked by husband), coconut, and just plain. Sauted onions really goes well, but forget the celery. I have even used sorral but it was over whelmed by the pumpkin. I HATE tofu, but I don't even notice it in this mix. Even tricked my boyfriend into eating tofu, the sucka.
