I have long thought that protein slowed digestion of carbs, until someone

recommended this and I realized it may not be true....this is an excellent

resource that discusses the science. So in other words for a patient with

diabetes it is NOT necessary to pair a protein with a carb in a snack.

It will not affect blood sugar in the way carbohydrates do. Carbs are digested

in about 1.5-2 hours after eating protein takes 3-4. So we always recommend

protein with a meal because it will slow the digestion of the carb decreasing

the spike in blood sugar and helping to prevent lows between meals. However the

only time meats will effect blood sugars is if they have a marinade or glaze,

and cheese you should never see a raise in blood sugars from. Vegetables and

nuts will vary depending on how much you. If you stick to less than ¼ cup you

should be fine, vegetables its one cup raw, ½ cup cooked. Hope that helps!!
