I'm wondering how many of you have a family history similar to mine....

grandfather died from diabetes complications, uncle was Type 2, controlled

by diet and exercise. My sister is Type 1 and has had it for 20 years...

she has to have a kidney transplant and is blind from diabetic

complications. My brother is also Type 2, doing well on diet and exercise,

while I'm Type 2, on medication, and not doing as well as I'd like. Now,

last year, both my nephew and my son found out they have it. My son is Type

2, controlling it with diet and exercise, while my nephew is Type 1 on

insulin. Recently, my brother-in-law -- father to my nephew who is

diabetic -- was diagnosed with Type 2 and controls it with diet and

exercise. My son calls it " the family curse " ... he has a good sense of

humor about it, tests often, and so far, is doing well. I guess every

family has something, and the kids have plenty of people to go to with their

questions. Sorry this was so long....

I don't know about literature on it...but before Banting invented insulin and

way before meters were available, diabetics who lived an average life span

mainly did it by virtue of avoiding carby foods. I don't know whether this

was due to accidental discovery or perhaps these people just didn't care for

carby foods. Of course, most diabetics died young...but I remember reading

this somewhere (probably on the internet)...Vicki

<<

Rick,

That was very forward thinking of her... I wonder if there was much

literature on low carbing in the 60's.

Rick,

" Mexican food " covers a lot of territory. I do make and eat mexican food all

the time.

You may not be able to eat all you want of flour tortillas and gorge on

chips, but there are lots of dishes you can enjoy. If you are on a lower

carb plan, chili rellenos, meaty chilis and seasoned meat entres work well.

If you tolerate beans, you can enjoy them in chili or straight up with or

without cheese and/or salsas or tomato/onion/pepper sauces.

One of the primary treatments for diabetes, before oral meds, and insulin,

was low carb, high protein way of eating.

When the medications came out, the diet thinking changed, (my guess is

influenced by the drug co's) to eating more carbs... and taking meds.

btw I eat plenty of " normal food " and very little manufactured food.. I'd

rather eat 15 extra carbs than eat that plastic or cardboard type food. Plus

the cost of eating the manufactured stuff, is pretty high.

Hi Rick,

Now that you've become a creative thinker, try Eden brand black soy

beans.....I make no profit on this suggestion. <g> For every 8 grams of

carb, there are 7 grams of fiber. They have NO impact on my bgs (I control

with diet and exercise) and my husband doesn't have to dose (H) for them.

Try them in chili. Mmmmmmm

Sandy,

I'm not sure how much info was available and I don't think Atkins

published his 1st book until the early 70's. She did mention that she

did the Atkins diet for quite a while, but I'm not sure when that was. I

know the the " family " she cooked for had lots of " meat & potato " dinner,

plus a lot of Mexican Food. My Mom is the world's best Mexican Food

cook... " Hey Mom, I'm bringing my List-Mates over for Mexican Food! "

:o)

Carol,

You are right. When I say, " Mexican Food " , my mind immediately goes to

Enchiladas, Chimichangas, Burritos, Quesadillas, Tostadas, etc. (oh man!

now I've gone and done it! I'm craving). I need to re-order my thinking

in regards to Mexican Food. A tortilla-less Tostada would be great, plus

the meaty chilis you mention. I do need to be careful there though

because I suspect that the beans play a big part with my intolerance.

" Mexican food " covers a lot of territory. I do make and eat mexican food

all

the time.

You may not be able to eat all you want of flour tortillas and gorge on

chips, but there are lots of dishes you can enjoy. If you are on a lower

carb plan, chili rellenos, meaty chilis and seasoned meat entres work

well.

How about substituting guacamole for the beans? I can tolerate the corn

tortillas just fine, but when I add the beans, it's just too much. I was

having flower tortillas, thinking they were better than the corn ones, and I

just checked my corn tortillas package... they're only 9 grams of carbs per

tortilla, while the flour are about 16 grams for a small tortillas.

Also, La Tortilla makes some pretty good lowcarb tortillas -- they really ARE

lowcarb, though some people may have more of a BG rise than others, another

YMMV thingie. So tortillas don't have to be a no-no. Available online.
