Hi Don,

Wow, that list looked tasty--you ate very well! I was looking at some

backpacker cookbooks this morning and it appears you can dehydrate

just about anything, so why not yogurt or kefir? Doesn't sound

appealing to me, but why not experiment and report back? Myself, I'd

probably drain it and make a dense kefir cheese.

As far as ghee, don't use your expensive raw butter unless you've got

it to burn, since ghee is well-cooked. Here're some instructions:

Hey, your list looks great! Purity Farms ghee is made from pastured

butter and is available in many health food stores. It isn't cheap, but

cheaper than making it from my locally available raw cream. I purchased

my current jar over two months ago and I keep mine at room temperature.

Very handy to spread on food right away without having to wait for it

to warm up like the butter in the fridge. Just be surenot to

contaminate it, use a clean knife every time.

I would also make kefir cheese, even cream cheese. On Dom's kefir site

he tried an experiment to see how long kefir would 'keep' in the

pantry. He filled jars full and topped them with a thin layer of olive

oil. He said it was good, though quite tangy, at 8 months! That was his

last jar and he indicated it may keep for longer than that. So I would

experiment with small jars of kefir cream cheese topped with a bit of

oil.

I've seen ghee sold at Whole Foods in the section of the store where the

mayonaise is and also where the Indian spices are.

Yes, you can dehydrate yogurt. I pureed it with a little fruit, added

some sweetener and poured it onto non stick dehydrator sheets to dry.

It ends up pretty thin like fruit leather, but more breakable. Tart

and tasty!!
