What would you do with it? I wanted to make boiled custard...but don't have a double-boiler. When (raw) milk starts to go sour in the fridge, it's best to take it out to ferment at room temp and become clabber within a day or so. You'll wind up with a delicious creamy beverage this way instead of slightly soured milk, which doesn't taste so great. I've done this many times with great success! It's the in-between stages that aren't so tasty, but either fresh/unfermented and thoroughly fermented are generally fantastic.
