I surprised they didn't tell you to eat stevia which has no carbs in it. Agava sugar is very low glycemic as well. I really don't do well with breads, etc.. Go to www.simplycoconut.com <http://www.simplycoconut.com/> and check out the flour and the sample recipes. I bought the recipe book and I make something almost everyday. When you mentioned French toast you got me hankering for pancakes so I think I will make them tonight with my coconut flour. Yummy!!
