Guest guest Posted January 17, 2002 Report Share Posted January 17, 2002 I almost always have soup and a lowcarb tortilla roll-up with roast beef and cheese or tuna salad or devilled egg or pastrami or bacon-avocado inside...sometimes I make a big pot of soup and have some every day or if I don't feel like cooking I have a whole can of lowfat chicken broth. Also a dill pickle and sometimes pork rinds...half a lowcarb chocolate bar for dessert. Vicki << I've been having a cheese and bacon omelet for the last few days, and I'm getting a little tired of omelets. I used to always have cheese and crackers... but without the crackers, it's not much of a meal. Any low carb ideas for lunch that take a minimum of cooking? Have to cook the chicken or boil the eggs but that really doesn't take too much time. Can serve on crackers or eat with fork. I use very little mayo but I do use a lot of spices in mine and add celery to the chicken salad and sometimes onion. I use the instant soup on cold days. Tuna is good as well and also filling. Sometimes I have to eat my meals in the car or nibble a few bites at a time when I'm with groups. I frequently use the high fiber/lower carb tortillas to wrap chopped roasted veggies and some protein from the previous dinner or I'll use hummus with lots of raw veggies. Last week, I made the chili-relleno-like quiche and squished some of that in a tortilla. I've also grabbed salmon patties with lettuce, tomoato and onion and wrapped that. I'll also take celery stuffed with hummus or eggplant. I've also used large well-dried lettuce leaves as wrappers. Wrapping deli meats and cheeses were also mentioned...I've wrapped meat slices around pickle spears. Breakfast:I use eggs in cooking, but rarely just eat them straight. I'll eat some of the same wraps I mentioned above or a boca or gardenburger with lots of horseradish. On cold mornings, I may have a cup of soup with the veggie-burger thrown in or even a cup of chile. This morning, I'm eating a salmon patty broken up with some roasted broccoli. I use the new Best Foods Too good 2 be true mayo :-) Its wonderful and 2 grams of carb for a serving. I am telling everyone about this but it does have a tad of sugar and so it may raise your sugar levels. It doesn't raise mine and I have tested at 1 and 2 and 3 hours...this tasts like real live mayo... Last week I have had bacon and tomato salad..I use 6 slices of Myer lean center cut bacon for 150 calories and no carbs. (I count calories too) and I add a bit of tomato and romaine lettuce and then I make a dressing with the mayo and a bit of lemon juice and a bit of splenda.. Its wonderful...and the fat in the bacon keeps me full until dinner...
