I've made salad dressing with raw eggs--I don't have the NT recipe, I

use one from an antique cook book--spices, olive oil, and ACV. (My

eaters can't do whey.) It has lasted a month before being used

completely up, so I can vouch for at least four weeks. I suspect it has

a shelf life of longer than that, but happily, it is too good to stick

around. :)
