Cold Cereal Recipe check

I've put together a recipe for cold breakfast cereal. It is yummy...

But, I have been baking it until crisp and golden brown at 250

degrees. This usually takes about 6 hours. Is all this bake time a

problem, nutritionally? There is no dairy in it except whey from the

overnight soak.
