Guest guest Posted March 26, 2006 Report Share Posted March 26, 2006 hi i thought that guar gum and xanthan gum aren't so good for us. aren't they somehow a neurotoxin or linked to neurotoxins? i've been recently researching thickeners, but haven't found a really good source for the information i thought i'd heard about that. anybody else have knowledge about it? thanks! ~ susan > Because there is no gluten in rice flour you need to add to the recipe 1 t. xanthan or guar gum per cup flour or a few egg whites to substitute gluten's binding of recipe.
