Guest guest Posted March 26, 2006 Report Share Posted March 26, 2006 , Because there is no gluten in rice flour you need to add to the recipe 1 t. xanthan or guar gum per cup flour or a few egg whites to substitute gluten's binding of recipe. Arrowroot best for gravy.Cookies you might be able to not use gums and have eggs do it. Google gluten free cookies to see if gum an ingredient. Can you tell I don't bake since going gluten free? These easy cookies always a hit wherever I've brought them. Should be can't believe there's no flour. Emeril's Flourless Peanut Butter Cookies 1 C. natural peanut butter 1 C. brown sugar 1 eggs 1 t. baking soda Mix together all ingredients, roll into 12 balls and bake 10 minutes at 350. If your PB is overly oily less rapadura or other than brown sugar may not absorb oil. Pour off top of jar before mixing. Halfway through baking you can indent cookie centers and put 1/2 t. of all fruit preserves for PB and jam cookies or add chocolate chips.
