I actually once worked shifts in a pork pie factory, and now can't seem to find anyone selling quite the lardy, gelatiney combination that my ex-employers made so well. Any thoughts much appreciated, especially on how to presoak the flour and still make good wholemeal pastry. I've had a good look through Nourishing Traditions, but can't find anything quite right...
