I soak hazlenuts, walnuts and almonds for 24 hours in salt water, then dehydrate for 2 days at 95 degrees. My question is, are the nuts going rancid at all. The walnuts and hazlenuts are kept in the fridge at the store, so dehydrating them at 95 degrees must make them rancid to some extent, right? Anyone have any ideas?
