Guest guest
I spent a while searching and can't find anything substantiating there being an enormous amount of free glutamate in bone broths. Can someone point me to such an analysis? Tangentially, the elimination diet site says that evidence for glutamate reactions is shaky and that many other reactions may be mistaken for glutamate reactions. I'm wondering if reactions to amines formed in improperly cooled stock might be frequently mistaken for glutamate reactions.
