If you have barbeque sauce, you can douse it in that the last 30

min., makes it messy but good. I like Annie's Organic brand. If

you have enough basil, you could do a pesto - just basil, garlic,

olive oil, salt & pepper to taste, and a dash of vinegar if you

like. Use as a dip or make pasta and put chicken and pesto on it.

Do you have cumin? You could do chicken fajita stir-fry - cooked

chicken re-heated with fried-till-carmelized onions, peppers, lots

of cumin, salt, pepper, cayenne optional. Good by itself, or over

rice, tortillas, etc.

This has become my go to when I need to convert recipes or find an NT

alternative and I have had success with every recipe so far.

Especially with my DH who is a SAD eater. I highly recommend it.

Ahhh, my favorite thing...chicken in a crock pot.

Here¹s what I do...

I assume you¹ve cooked your chicken slowly, and from it you¹ve gotten a nice

broth, some overcooked veges, and some super-soft chicken meat.

With the broth, I will do one of 2 things; either strain it (some people

clarify, but I don¹t care about ³clear² broth...it¹s not a restaurant here!)

and freeze it, or I blend up the overcooked veges into the broth to make a

nice thick stock for soup.

With the chicken, of course I remove all the bones. Usually the dark meat

(not the favorite in our house) goes chopped up into the soup stock (if I

didn¹t freeze it). Then I add another round of chopped carrots, celery and

onion, some soaked quinoa for grain nutrition, and cook til veges are

tender. This makes the best chicken soup/stew I¹ve ever had!

With the white meat, I usually do one of two things:

1-chop coursely, add celery, minced onion, salt, pepper, a little cayenne,

and some Hain¹s mayo...for chicken salad, or

2-shred it by hand and drop it in some homemade tomato sauce, and serve it

over soaked brown rice or noodles
