Coconut Flour Pancake recipe

Does anyone have a good coconut flour pancake recipe? I bought some

coconut flour but don't know if it is worth it to get the recipe book

too (Cooking with Coconut Flour by Bruce Fife). I'm hoping to try a

recipe first. Thanks much, Sharon

I found Cooking with Coconut Flour at the library and then

decided not to buy it.

I didn't think much of the Bruce Fife coconut flour pancakes, but I have

loved everything else I have tried from that cookbook. We make pancakes

every Sat. morning using 1/3 buckwheat, 1/3 teff and 1/3 coconut flour. We

soak it overnight in water with lemon, then follow the recipe in NT after

that. If you do get the cookbook, I usually cut the sugar in half on

everything in his recipes.

pancakes:

2 eggs

2tbls melted butter or coconut oil ( I use butter)

2 tbls milk or coconut milk ( I use coconut milk)

2tbls sifted coconut flour

1 tsp sugar (i use 1/2 tsp honey)

1/8tsp baking powder (i use 1/4 tsp baking soda and 1/4 tsp celtic salt)

these are really good!!!!! very light and delicate........I found that they

are best cooked at a low temp, in a heavy la creueset pan........I also add

cinnamon, once I added cocoa powder and extra honey for a yummy treat. they

are awsome smeared w/ a generous amount of raw butter. Enjoy!!!!!!!!!!!! Rhonda

These do sound good! How many pancakes does it make? I also assume you don't

have to soak becuase it is not grain flour right? Just wanted to make sure and

all.
