I saw one reference to only steep some ingredients for 30 min. so

maybe you can add them at any time; also maybe the tannins would be

too strong if you left the tea in. When I made the ginger beer, I

left the lemon peel in for a week, then strained the mess, fed the

ginger/lemon peel stuff to the poultry who gobbled it down like they'd

never seen food before. I tried a bit of ginger and it was yummy!

You could also boil some citrus peel in maybe 1/2 cup of water, add a

little honey (like 2 tbps if your ratio was 1 part honey to 4 parts

water) and add now, before bottling. The added honey would keep from

watering it down from adding the additional liquid. That's my best

guess, I haven't made any ferments anyone's raved about yet!

Milkstache here, Renate I recommend this site for some pertinent timing on

adding tannins. I like the tannin pucker, and would not hesitate to add it to a

'weak' wine at any time.
