I've eaten Ezekiel bread before but I'm kind of glad they modify the

recipe a bit, even though I could do without the sprouted soy.

Alvarado Street Bakery makes several sprouted breads, including a

sprouted sourdough bread. They don't use soy sprouts, but do use soy

lecithin. I get the sprouted sourdough bread at WF, though I don't

eat more than about a half a loaf every week or two.

I think it's odd that Ezekiel uses soy because that is not a biblical

bean :)

Yeah, but the excrement isn't human, is it?

The Ezekiel bread with the red label, which ever kind that is, does not include

sprouted soy. I looked at the labels on all the Ezekiel bread versions and the

red one is the only one that does not include sprouted soy.

I recently tried the sprouted soy from Sprouts, which does include soy lecithin,

but it was just too dense. That's what I don't like about the commercially

available sprouted breads. They are just too heavy.

When I can't make my own bread I eat Trader Joes organic 7-grain

flourless sprouted bread. No soy, refined gluten, or anything

strange. But sadly its not cooked over excrement of any sort.

The best I have tasted among commercial brands is Silver Hills Bakery

sprouted bread -- but they are only available in the Pacific Northwest (got

it at a Whole Foods in Seattle).

I prefer the Alvarado St. Bakery bread to Eziekiel. It tastes fresher to me

-- but neither one tastes really fresh.

Summers Sprouted Flour:

I've never tried it. I don't eat grains enough to mess with it.

Ideally, you should grind your soaked or sprouted grain immediately

before use to minimize oxidation of the PUFA in the grain. Although,

maybe grinding, mixing, and cooking does that anyway.

And how would you know that Mother Nature doesn't sanction the use of

gas or electric ovens? :)

I looked for this today and the guy said that what people normally

mean when they ask for the peasant bread is this " Pain Pascal Organic

Demi Miche " . It doesn't have peasant anywhere in it and the only

ingredients are organic wheat, filtered water, and salt. It doesn't

say whole wheat but 130 calories has 16% fiber and 6% iron. Its

obviously sourdough after tasting it and you get a really really big

1/2 of a round loaf for $3.29 (28 oz of bread).

I'm guessing they changed the name because peasant bread didn't sound

fancy enough.

Highly reccomended if you like sourdough bread. Its extremely good

with just butter and a little extra salt.
