Alvarado Street Bakery makes several sprouted breads, including a sprouted sourdough bread. They don't use soy sprouts, but do use soy lecithin. I get the sprouted sourdough bread at WF, though I don't eat more than about a half a loaf every week or two. Guest guest Posted January 1, 2008 Report Share Posted January 1, 2008 The Ezekiel bread with the red label, which ever kind that is, does not include sprouted soy. I looked at the labels on all the Ezekiel bread versions and the red one is the only one that does not include sprouted soy. I recently tried the sprouted soy from Sprouts, which does include soy lecithin, but it was just too dense. That's what I don't like about the commercially available sprouted breads. They are just too heavy. Guest guest Posted January 1, 2008 Report Share Posted January 1, 2008 The best I have tasted among commercial brands is Silver Hills Bakery sprouted bread -- but they are only available in the Pacific Northwest (got it at a Whole Foods in Seattle). Ideally, you should grind your soaked or sprouted grain immediately before use to minimize oxidation of the PUFA in the grain. Although, maybe grinding, mixing, and cooking does that anyway. It doesn't have peasant anywhere in it and the only ingredients are organic wheat, filtered water, and salt. It doesn't say whole wheat but 130 calories has 16% fiber and 6% iron. Its obviously sourdough after tasting it and you get a really really big 1/2 of a round loaf for $3.29 (28 oz of bread). I'm guessing they changed the name because peasant bread didn't sound fancy enough. Highly reccomended if you like sourdough bread.
