It's OK taste-wise to me for it to be that way, and allegedly it hasn't destroyed all of the good stuff in the milk, either. The same thing happens when you buy cream that's been frozen. If you make ice cream from the cream, you don't notice a problem If your raw milk has soured and is too gross to drink, like it's gotten something truly bad into it, I would throw it out. If it just smells a little cheesey and " weird " to you, but not entirely " bad, " you could try cooking with it, but it will still have a bit of a soured flavor. You could warm it, add cocoa powder and maple syrup or rapadura/sucanat, and have a hot chocolate. You could make a fruit smoothie with it. You could heat it and try culturing it with yogurt, unpasteurized sour cream, or any other culture. Gray, Chandler, AZ > > Hi all . I am fairly new to all this so I am looking for advise . The Weston Price website has some recipes for what to do with sour milk. You can even make creme brulee, and it's delicious and not sour at all. I use my sour milk in muffins and all sorts of baked goods. Once my milk sours I do tend to use it more quickly for other uses. Milk sours because it is alive not because " it's gotten something truly bad into it " . That being said long before refrigeration sour milk was used for multiple purposes- like clabbered milk & butter which is delicious! Don't you think the pilgrims and pioneers would have dies if they didn't use up their precious milk & instead threw it out? I do. Also, it doesn't really incorporate back in if its been frozen, but I freeze milk all the time with no adverse problems as far as drinking it and using it in smoothies, etc. HTH, Sal Regarding frozen milk, the cream won't go back to normal.
