out of town - need recipe advice...

Hey, I'm out of town without my cookbooks and want to show my cousin

(whose wedding I'm attending) how to make lacto-fermented beverages,

specifically key lime juice + rapadura + water + whey, but can't

remember the proportions (from either Full Moon Feast or Eat Fat/Lose

Fat). Can anyone help?

Punch from NT:

juice from 6-8 lemons

1/2 c rapadura

1/2 c whey

1/2 tsp grated nutmeg

2 quarts filtered water

Place all ingredients in a 2-qt glass container. Cover tightly and

leave at room temperature for 2-3 days. skim off any foam that my have

risen to the top. Cover tightly and refrigerate. The punch will

develop more flavor over time.

From Spring 2008 Wise Traditions:

Fermented Sun Tea

3 T whey

4 T rapadura

1/4 lemon lime or orange (squeezed)

filtered water to fill 1 gallon jug

(12 tea bags -- optional?)
