Guest guest Posted April 25, 2008 Report Share Posted April 25, 2008 Hey, I'm out of town without my cookbooks and want to show my cousin (whose wedding I'm attending) how to make lacto-fermented beverages, specifically key lime juice + rapadura + water + whey, but can't remember the proportions (from either Full Moon Feast or Eat Fat/Lose Fat). Guest guest Posted April 26, 2008 Report Share Posted April 26, 2008 Punch from NT: juice from 6-8 lemons 1/2 c rapadura 1/2 c whey 1/2 tsp grated nutmeg 2 quarts filtered water Place all ingredients in a 2-qt glass container. Cover tightly and leave at room temperature for 2-3 days. skim off any foam that my have risen to the top. Cover tightly and refrigerate. The punch will develop more flavor over time.
