stomach acid kills good bacteria? and kombucha cultures

Hi there,

I'm new to this list and have a couple of questions. Where do you

recommend getting a kombucha culture from? I can easily do a google

search, but I wasn't sure how to check on quality.

Also, if probiotic supplements have to have such heavy duty coating to

keep the good bacteria from being killed by stomach acid, then it

would logically follow that the good bacteria in fermented foods would

be killed by stomach acid. So... how does the fermented food goodness

escape death by stomach acid?

I would buy a bottle of GT Dave's kombucha if you don't know anyone

who has a scoby to give you.

Just dump the bottle into the tea mix and let it go. In this weather,

it may only take a month to produce a scoby. I started one in January

and it took about 3 months, so don't lose patience. It was a very sour

batch of kombucha, but I haven't let the batches after that go so long

so they aren't as sour.
