Guest guest Posted May 15, 2008 Report Share Posted May 15, 2008 their coconut oil is great. i usually get the traditionally fermented kind, though the flavor is quite different. though i think in an uncooked confection or the like the centrifuged tastes better since it is more easily detectable. the mayo is great too, i just wish they had some without evap. cane juice. Guest guest Posted May 17, 2008 Report Share Posted May 17, 2008 Wouldn't it just be a tiny amount of sugar? When I need to make homemade Hellman's, it requires about a half a teaspoon per batch. One teaspoon makes a batch too sweet. From a chefie standpoint, balancing sweet and salty is important. Honey is too sweet in a mayo, unless you're making a flavored one, and an emulsion is quite unstable, so any substitutions can't weaken the emulsion.
