Is organic and once is open you have to keep it in the fridge. But I know since for ever that when you open a jar or a can and it make a sound and the conten go out of the jar or can is not in good shape. Be carefull about that. I know in the files you can find how to make your own. I didn't do it so I can't tell exactly where, just go to the files and explore a little. Their product is heated and according to Bee we shld not be eating this kind of sauerkraut. Plse check out Eden products and u will find that I am correct regarding their sauerkraut. I do not find that sauerkraut is horribly sour - I buy Kartheins here in Canada, which is unpasteurized and found in the fridge at my health store. The reason it must be kept in the fridge is because it continues to ferment if kept at room temperature. So any you've had in the fridge for a long time will still be okay.
