This is pure speculation, but I wonder whether dietary D would be more effective at stimulating the expression of proteins on the intestinal lining which are involved in mineral absorption. Granted, there is some calcitriol in food, and there is probably some activation that occurs in the intestine, but this is probably much tinier than the amount made by the kidney, which is a homestatic response to maintain blood calcium levels.
