I buy it from the farmer but can't make myself cook it. Bad memories from youth! What is the best recipe to start with to try and get over this? I have the NT cookbook. I had some froie gras at this really nice restaurant we went to celebrate our marriage, DH and me.. too!. The flavor was fine but the texture really made me.. bleh. I had to eat a tiny bit of it with my fish and then it was delicious! =) I will have to give your idea a try. Where do you order it? I eliminated just about everything except olive oil and I do eat a fair amount of nuts. When I don't cook, which around here happens a lot, then I'm eating all kinds of nasties though I try to limit them. We are finally getting out on our own, house is set to close next week sometime. I had myself taking CLO from Green Pastures but when I threw up after taking the liquid while having morning sickness it hasn't been sitting well since. Personally, I just slice it thin and sautee it in butter for less than a minute and eat it like that. However, I would say that it goes best with bacon fat, onions and garlic. So start off with a healthy liver that looks and smells very fresh, cook a couple pieces of bacon, then partially cook some onions and garlic in the fat, and then throw in the liver, cut thinly, and cook it just enough to brown it on all sides. Throw pieces of bacon on top. That should do it. Deficiencies of fat-soluble vitamins seem to be involved in the development of autoimmune disorders. Personally, I would set as an ideal goal to try to limit PUFA from nuts and olive oil and use about a teaspoon or 3/4 tsp CLO and try to get A and D from liver and sunshine when possible. I don't cook with it but eat a tablespoon of it for my B vitamins. Dawn, I bought some frozen liver last year from Debbie with Bandera Grass-Fed Meats at the Sunset Valley farmers market. I don't much care for it plain either. I found mixing it with other meat worked well. I cooked it and then mixed it with other meat when eating. I've heard other people say that they mince it and mix it into ground meats before cooking, though I haven't tried that. I've heard that's a good way to sneak it into kid's food. Of course if his burger or whatnot is tastie and then I tell him there's liver in it he'll be fine with it.
