Traditionally in France, offal is of the highest gastronomic order. In French cuisine, many of its defining delicacies are offal, be it ris de veau (sweetbreads, actually thymus), foie de veau (calves' liver) or foie gras (from geese), tete de veau (poached calf's head) and even andouilletes - (tripe sausages from Burgundy)...
