Guest guest Posted February 11, 2008 Report Share Posted February 11, 2008 I know I've read that roasting would destroy a significant amount of alfatoxins, maybe like 60% if I remember correctly. Peanuts do have a tendency to get moldy too because of how they naturally grow. I know soaked and dehydrated peanuts just don't taste too good to me personally. I love crispy almonds, pecans, and walnuts. C. best to cook peanuts? hi all, i've tried making soaked and dehydrated peanuts for milk and to snack on, but they taste bitter and " green " and i don't like them. i read on the web some comments like " peanuts need to be cooked " and from a raw nut butter company " you can't make raw peanut butter " . one said this is because they have a protein inhibitor, but didn't give details. i know the chinese are big on boiling them. it seems obvious to me that roasted peanuts in fact taste better which would seem to me a clue for nutrition. also i've been pondering...if peanuts are a legume and not really a nut, wouldn't you have to cook them? just wondering if any of you bright people out there have any insight on this. thanks, sabine. Guest guest Posted February 24, 2008 Report Share Posted February 24, 2008 peanuts could be classified as a tuberous legumes, as they grow underground, very much unlike a nut from a tree. you might try briefly blanching them in hot water instead of soaking them for extended periods of time. good idea to slip the skins off the flesh, as it is thought that the skins have toxins that help protect the flesh once the peanuts have been shelled & blanched.
