Tropical Traditons coconut cream and Wilderness Family Naturals coconut spread both taste like frosting to me. I've also mixed coconut flour with coconut oil and it was like frosting. Guest guest Posted June 26, 2008 Report Share Posted June 26, 2008 I love using cream cheese for icings. There are so many additions you can use to change its texture/flavor. I sweeten mine with Stevia, and sometimes maple syrup - have also used agave, as well as raw honey. Chocolate cream cheese is easy - just add chocolate (powder, ground nibs, etc.). I make a pineapple (fresh - pulsed a few times in food processor), coconut oil, shredded coconut, vanilla (home-made), cream cheese frosting for my carrot cake. Almond cream cheese is another favorite, especially good when it contains one raw egg, almond flavoring (home-made), and ground almonds - used for " stuffing " crepes......anyway, possibilities are endless depending on your need. I make ricottta all the time, also, and use it the same way I'd use cream cheese. Oh, I also add cream to either one to get a nice texture......oh! oh! and cinnamon added to cream cheese for icing? Another yummy...........I can try to give you proportions if you give me an idea of size/quantity, etc., otherwise, I just use the grab and toss cooking method. LOL.
