Guest guest Posted February 26, 2008 Report Share Posted February 26, 2008 I didn't want to spend the money on a young coconut at first so I decided to try the canned coconut water to see if it would ferment. I also didn't have kefir grains but I did have s. boulardii and sourdough starter. So I used a 16 oz can of coconut water and a capsule of s. boulardii and a teaspoon of the sourdough starter - put them in a glass dish with a lid for a day and today it tasted pretty good! Like coconut soda - less sweet but fizzy. These cans are on sale for $1 each! I realize that it's been pasturized so it doesn't have the coconut enzymes, etc. but doesn't the yeast and bacteria from the starter put a lot of that back in? Does anyone here make the " real " coconut kefir? Does it go to alcohol after a few days or just get sour?
